The Perfect Snack: Delicious, Nutritious Pistachios

One of our favorite snacks is pistachios. I remember as a kid, I never liked them (or maybe my mom just didn’t want to share?). However, they are one of my favorites now, and I think the girls may even like them more than me!

I love when we can agree on a snack that feels indulgent, but is absolutely healthy at the same time! According to the Pistachio Health Institute, pistachios are an excellent source of vitamin B6, copper and manganese. They’re also packed with antioxidants, which are so important in keeping us healthy.

I never really thought of pistachios as a fiber source, but they are! Pistachios provide 12% of the daily value per 30 gram serving. And, compared to other nuts, you get more pistachios per serving. With one serving of pistachios, you get 49 kernels per ounce, compared to 23 almonds, 14 walnut halves or 18 cashews. That, combined with the fiber, and you’ll feel full longer.

There have also been correlations between pistachio consumption and a reduced risk of heart disease and mortality. Since a recent study done by Harvard University and published in New England Journal of Medicine says these health benefits increase with a higher nut consumption, you can feel happy snacking on pistachios throughout the week.

Want to know secret reason I love providing pistachios as a healthy snack to my girls? They keep them busy! Shelling pistachios can be a time consuming task for little fingers, so I like to give them a bowl when I need to get something done. And it helps with their dexterity!

pistachios-zoeThere’s a side benefit for us adults too. Having to shell all those pistachios may actually curb how much we consume by making us more mindful of what we’re eating!

Staying healthy is more than what you put in your mouth. Celebrity Trainer Valerie Water has some great tips in the infographic at the bottom of this post on how to get you “Hot in a Hurray.” In addition to all of her tips about pistachios, I really like how she stresses that a little workout is better than none at all. That’s something I need to remember and work on this year! Starting the day with a workout – no matter how short – is a great way to start the day in a good mood.
