Dive into the heart of Argentine comfort food with this enticing rendition of Revuelto Gramajo, a breakfast classic boasting crispy French fries, savory bacon, and creamy, cheesy scrambled eggs. A vibrant dish from Buenos Aires that’s easy to whip up, yet deliciously satisfying, is perfect for kickstarting your day or indulging in a hearty brunch.
Imagine sitting down to a breakfast of delicious crispy potatoes, succulent bacon and creamy, whisked eggs topped off with melted cheese, fresh chives, and a medley of savory bell peppers and onions. The dish I’m describing is an iteration of Revuelto Gramajo, a traditional Argentine cuisine that dates back to the 19th century.
Legend says that it was named after Colonel Artemio Gramajo, a figure of Argentine history, who reportedly enjoyed this simple but satisfying combination of ingredients. I was first introduced to this savory dish while living in Uruguay, and I’ve been making it myself ever since we moved back to the US… I agree that it’s satisfying!
My version of this potato dish is comfort food at its finest, made even more enticing by the use of french fries, or “papas fritas,” as they’re known in Spanish. If you’re wondering about the use of french fries instead of the typical julienned potatoes, it’s a clever twist that adds extra crispiness to the dish.
With the variety of flavors and textures, it’s the perfect meal to warm your belly and your heart, reminding us that the best food is often the simplest, made from key ingredients combined with love and skill.

Tips for Making the Best Revuelto Gramajo
Answers to all of your questions about making this classic Argentine recipe, including tips and substitution ideas.
Alternatives to French fries
This dish is typically made with julienned potatoes, so that is a very good alternative to frozen fries. You can also use hash browns or really any type of potato that you like to give you some variety in preparing this recipe.
Best type of pan to use
A large skillet is ideal for cooking the bacon and vegetables and adding the eggs. This allows for even cooking and enough space to mix in the french fries.
How to make potatoes extra crispy
While you can bake your French fries, deep frying them in plenty of oil at high heat will give them that desired crunch. If you decide to deep fry them, be sure to drain them on paper towels to remove excess oil.
What to substitute for mozzarella cheese
Feel free to experiment with different cheese variants to suit your taste. Just remember, the cheese should melt well to create that rich, creamy texture.
Substitutions for chives
You can substitute green onions for chives to achieve a similar flavor profile.
What meat to use instead of bacon
If you’re feeling adventurous, you can swap cooked ham for bacon, which is another very traditional option. Thin strips of ham would work well in this dish.
Vegetarian options
You can make this dish vegetarian-friendly by replacing the bacon with a meat substitute, or simply adding more vegetables of your choice. There’s really no way to make this a vegan dish since eggs are one of the primary ingredients.
Adding more flavor to the eggs
Besides the classic salt and black pepper, you can add fresh garlic or herbs like chopped parsley or cilantro for an added layer of flavor. Remember, the secret is in the details.
Best way to serve this dish
This dish is best enjoyed hot off the stove, topped with additional cheese and green onions. Enjoy it with your favorite breakfast sides for a hearty meal.
