‘Beef’ Up Your Dinners with Yummy Mushrooms!

mushrooms I love sautéed mushrooms. Whenever I sauté a pan of veggies, I almost always toss in a bunch of sliced mushrooms. Brian and I love them, but unfortunately our girls don’t have the same taste for them that we do (although Kaylee loves them raw).

I’ve written before about the benefits of mushrooms. Since mushrooms are a source of selenium, potassium, riboflavin, niacin, vitamin D, pantothenic acid, ergothionine and more, I have gotten sneaky with my use of them over the last few months. Instead of slicing our mushrooms, I have started mincing them up so small that I can sneak them in almost any dish completely undetected.

If I’m making spaghetti sauce with organic ground beef, I mince up mushrooms and onions really tiny and, once they are cooked in with the beef, the mushrooms blend right in. Zoë has been fooled every time!

I do the exact same thing when I make taco meat with ground beef. As long as you mince the mushrooms really well, they will go undetected, even with a picky eater.

I have also successfully snuck mushrooms into meatloaf. I always sauté onions and bell peppers to add to my meatloaf, but I have started adding minced mushrooms to that mix. Another success.

I love mushrooms too, and as a vegetarian, I definitely enjoy how they “beef” up a veggie dish!

I don’t think you could sneak them by me, but I am sad that my kids are less willing to eat around them than I am. I cannot stand the taste, smell or texture of them. If they are small enough and in low enough concentrations, I try my best to ignore them in things like lasagna, but my threshold is very low.

I was surprised to be able to sneak them by my older daughter since she wouldn’t eat anything on her plate if there were mushrooms on it. The secret is mincing them as small as you would mince garlic.

Chrystal, so fun seeing you last weekend! Can’t wait to hang out with you ladies again. I’m loving this post because mushrooms are one of my favorite foods. I could easily eat them every day just sauteed with butter. I had no idea they had so many vitamins and nutrients.
