My Go-To Healthy Meals for Busy Days

ID-10058022This writing prompt from the Green Moms Network writing challenge was probably one of the most difficult ones for me to write about. Strange since I cook from scratch pretty much every day, huh?

My favorite meals to cook are ones that I can slowly throw together throughout the day without the need to spend hours in the kitchen all at once. To that end, I would say that crockpot meals are definitely my “go-to” meals when I’m busy. And most everything we eat is healthy, so I guess my crockpot meals are my go-to healthy meals!

My most common meal is to toss a whole chicken in the crockpot and dump a bunch of paprika spice mix all over it and then turn it on low and leave it to cook until it starts to fall apart (at least 6 hours).

Then I put some white basmati rice in the rice cooker a while before I expect the chicken to be done and put some broccoli or cauliflower in the steamer after that and I have an easy, healthy meal.

If I’m going to cook something not using the crockpot, my go-to meal is Mexican food (because let’s face it, sometimes I forget that I planned on using the crockpot until it’s 3 pm and I realize I need to plan a different meal).

Lately, we have been eating a lot of taco salads – yum! I usually cook up a pound of organic, grassfed ground beef with one 8 oz package of minced baby bella mushrooms and half of an organic onion, also minced. That, of course, is seasoned with my simple Taco Seasoning spice.

Then I chop up some tomatoes, cilantro and cabbage, make some homemade guacamole, heat up some black beans and pull out the salsa and hot sauce and we’re good to go! Nothing fancy, but it works in our house!
