At Expo West, I met a ton of great brands offering new gluten free products. One of the companies I discovered Among Friends, which makes healthy baking mixes, including two gluten free cookie mixes.
I brought home 2 bags of cookie mix with me:
- Phil ‘em Up, which includes Gluten-free Oats, Cranberries, Callebaut Chocolate.
- Shane’s Sweet-n-Spicy, which includes Gluten-free Oat Flour, Cinnamon, Lemon Zest
I always get nervous baking with new mixes because I’m never sure whether my egg substitutes will work or not. I substituted apple sauce and a bit of chia seeds for the eggs in both of these recipes and they both came out amazing.
The Phil ‘em Up cookies were great. I wasn’t sure if I’d like cranberries with the chocolate but it went really well together. Even Brian liked them and he typically doesn’t like chocolate chips in his oatmeal cookies!
The Shane’s Sweet-n-Spicy cookies were also delicious. Zoë said we needed to get another bag so that we could make these cookies again for Santa this year! If they’re good enough for Santa, they’re good enough for me
Among Friends is the creation of two friends, Suzie Miller and Lizann Anderson. They also makes other baking mixes that aren’t gluten free, but are nutrient dense.
Sometimes it’s nice to be able to just grab a mix when you’re in a hurry. It’s great to know that there are healthier (and gluten free) options out there!
