The challenge for week 3 was preserving with vinegar. A lot of people preserved herbs, but I chose to make the sweet pickles that Brian and Zoë like (since I made sour pickles in the first challenge).
This was one of only two methods Jenny covered that I had used before—you really couldn’t find pickles in Uruguay so we had to learn to make our own “quick pickles.”

I ended up with 2 jars because we had 2 large cucumbers from the Farmer’s Market that needed to be used up:
They are good and easy to make if you like sweet pickles (I prefer mine sour).
There wasn’t much else that seemed appealing to me to preserve in vinegar, but I’m open to suggestions. What are your favorite things to preserve in vinegar?
