I love making Irish Beef Stew in the slow cooker because the beef is always so tender and flavorful. It’s perfect for those busy days where I know we’re going to get home late.
I can toss everything in the slow cooker that morning (or the night before), push a button before we leave the house and we come home to a tasty meal.

The Best Slow Cooker Guinness Irish Beef Stew
- 1 1/2 pounds extra lean stew beef, grassfed preferred
- 1 teaspoon coarse sea salt
- 1 teaspoon ground pepper
- 2 tablespoons all-purpose flour
- 2 tablespoons olive oil
- 4-5 medium organic Yukon gold potatoes – peeled/diced
- 1 1/2 cups organic baby carrots – peeled and diced (you can use whole, chopped carrots too)
- 1 large organic yellow onion – chopped
- 2 organic garlic gloves – minced
- 1/4 cup organic tomato paste
- 4 cups beef broth
- 11.2 oz bottle Guiness Extra Stout
- 1 tablespoon Worcestershire sauce
- 1 bayleaf
- 1/2 tablespoon dried thyme
- Salt and pepper, to taste
- Parsley, to garnish
- Add the beef, sea salt, pepper and flour to a large mixing bowl. Toss well to coat the beef.
- In a large skillet, heat the olive oil over medium-high heat. Reduce the heat to medium and add the flour-coated beef. Brown on all sides. Set aside.
- Turn the crockpot on and grease with more olive oil. Add the potatoes, carrots, onions and bay leaf.
- Place the browned beef, tomato paste, Worcestershire sauce, garlic and thyme on top of the vegetables.
- Pour the beef broth and Guinness into the crockpot and stir to combine.
- Cover and cook for 3-4 hours on high or 10-12 hours on low. Add salt and pepper to taste.
- Serve the Guinness Irish beef stew in a bowl or on top of mashed potatoes. Garnish with parsley, if desired.
