Do you ever have those days where lunchtime sneaks up on you and you had no idea what you're going to serve the kids? We had one of those days on Monday, so I took the opportunity to explain to the girls what Meatless Monday was, and why some people observe it.
We had just received a sampler kit of Asian, Indian and Rice dishes from Tasty Bite. They come in convenient pouches and are made with ingredients you can actually pronounce. No artificial ingredients, GMOs, MSG or preservatives. I was really impressed with how simple the ingredients are for a pre-packaged food.
Preparation is also very simple. If you have a microwave, you can heat them up quickly that way. Or if you don't have a microwave, like me, you can simply boil the pouches themselves for 5 minutes and you have an easy meal ready to go. I would have loved these quick meals when I worked in an office and was strapped for time at lunch.
The taste is also pretty good. Even the kids devoured our Meatless Monday lunch!
It only took me about 10-15 minutes total to prepare this meal. We had leftover rice in the refrigerator so I popped it back in the rice cooker to heat it up and set a pot of water to boil on the stove.
Then I popped the package of Madras Lentils into the pan and boiled them for 5 minutes. All 3 of us got a serving of Madras Lentils over white rice and it made a very filling lunch for us.
