During the school year, mornings are an absolute rush no matter how early I manage to get the girls out of bed. When I finally get them out of bed, I have to stay on them constantly to keep getting ready. All while making them breakfast and packing their lunches.
A funny thing happens many mornings. I completely forget about myself. Not only have I walked out the door in clothes I slept in before, but I have forgotten to feed myself on more than one occassion. And when I don't eat, it's not good for me or anyone around me. That means I'm always on the hunt for healthy breakfast ideas that are quick and easy.
I have slowly come to accept the fact that it's important for me to have foods that are quick to grab when I'm in a rush, so I don't starve myself. While I do make most of our meals from scratch, I'll admit I need to have a few convenince foods around for mornings where life is a real scramble and I have a real need to eat something.
Here are 7 gluten-free quick and easy, healthy breakfast ideas for moms. Many of them are things you have to make ahead of time, but I'll also share one convenience food I keep on hand for “those” days.
Making egg cups is one of my healthy breakfast ideas that is incredibly easy, and they are so simple to grab and go. It's much easier to grab an egg cup rather than trying to peel a hard boiled egg when you're in a rush. If you don't like plain egg cups, then you can also make mushroom and spinach egg cups – or make them with your favorite veggies.
Very similar to egg cups, you can pack your quiche full of your favorite veggies and meats, making them another of my favorite healthy breakfast ideas. If you keep it pre-sliced in the refrigerator, then all you have to do is grab a piece and you're on your way.
My favorite thing about overnight oats is that you can make enough to last for a few days. You can use a variety of fruits, depending upon what is in season, to give yourself variety. And then all you have to do is grab a jar and a spoon and you're set. I'll admit I have eaten mine one bite at a time between packing lunches on more than one occasion.
Gluten Free Muffins
Muffins are another of the quick and easy, healthy breakfast ideas my family loves. I love my gluten free muffin recipe because you can pack them full of all sorts of nutritious goodies and really customize them to your family's tastes.
A few years ago, I starting making green smoothies that could be made in bulk and kept in the fridge for a few days. They are pretty thick, but it's a wonderful way to get more veggies into your diet!
When I'm working out regularly (I can't wait for school to start again so I can get back to working out!), my body craves a lot more protein, so I need healthy breakfast ideas that are heavy on the protein. Drinking protein shakes is a super easy way to get more protein when you're in a rush. You can mix up your protein powder in cup with some almond milk and drink it down or you can get fancy and blend up a quick Peanut Butter Banana Protein Shake.
CLIF® Organic Trail Mix Bars
The most effortless of my healthy breakfast ideas is a CLIF Organic Trail Mix Bar.
