Have you gotten on the Power Bowl bandwagon yet? It’s a growing trend, and it’s easy to see why! Choose your favorite grains, veggies and protein. Toss is some herbs, spices or sauce and you have an entire meal in a bowl.
One of my family’s favorite proteins is shrimp. It’s something we typically only have on occasion, but when we do, we never have leftovers. I find that the texture and flavor of shrimp pairs well with quinoa. That’s why I partnered them up with broccoli in this Shrimp Quinoa Power Bowl recipe.
While I used cilantro (one of our favorite herbs), you could easily swap it out with parsley for a more mild flavor. To boost the cilantro flavor, add a little salsa or Cholula to give it a Mexican spin. Or you could add some soy sauce and sriracha for an Asian flair.
That’s one of the reasons I love a good power bowl. You can easily doctor them up to have any flavor that you’re craving. And everyone in the family can choose different sauces so everyone has the style of cuisine they’re craving – and you still only have to prepare on meal.
Shrimp Quinoa Power Bowl Recipe
Shrimp Quinoa Power Bowl
- Melt the butter in a pan over medium heat and add the garlic.
- Add the shrimps, lemon juice, paprika, salt and pepper.
- Cook and stir ingredients for 6 minutes.
- Place the quinoa, broccoli florets and cilantro into a bowl.
- Add the cooked shrimp.
- Serve and enjoy.
