I have always loved baking. When I was a little girl, I even dreamed of having my own bakery someday. My already difficult challenge of baking at altitude got even more trying when I went gluten free 9 months ago. And again when I had to go egg free.
I have to confess that I have not been doing as much baking lately, but that doesn’t mean I don’t want to be able to indulge in a cookie or other baked good every once in a while! The problem is finding one I can actually eat.
I stumbled across Lucy’s cookies a while ago, and they were kind enough to send me a few packages to review – including their chocolate brownie cakes and their new special holiday cookies!
If you haven’t had them before, Lucy’s cookies are crispy yumminess. Even the girls love them! They come in several different flavors, but they’re all gluten free and vegan (no milk or eggs). They are also free of peanuts and tree nuts, and non-GMO.
They do have soy milk in them. I wish it was almond or coconut milk, but I can tolerate soy in small amounts and do fine with these cookies. The soy is organic and GMO-free.
I haven’t had a brownie since I went gluten free, so the Chocolate Brownie Cakes were the first thing I tried. What a nice treat! They are small and come 2 in a pack so that’s perfect. That way I can have a taste of chocolate when I want it without overindulging. They were light and fluffy, and delicious!
The holiday cookies were also really good. I got to try the Holiday Sugars and the Mint Merry Chocolate varieties. They are tasty without being too sweet.
