By no means could you call my family vegetarians. While we do eat a plant-heavy diet, we also enjoy eating quality meats like grassfed beef, organic chicken and hertitage pork like that offered by ButcherBox.

Instant Pot Vegetable Curry
- Place all of the ingredients except for the cherry tomatoes into your Instant Pot. Set to high pressure on manual for 10 minutes.
- Once the time has completed, release the pressure using a quick pressure release. Stir the Instant Pot Vegetable Curry well, sprinkle with sea salt, black pepper and cherry tomato halves. Serve the veggie curry over steamed rice in a bowl.
