Instant Pot Mexican Black Beans

Cook Beans Faster than the Stove Top!

It’s quick and easy to pressure cook black beans when compared to the cook time of boiling water on the stove top.

This Instant Pot Black Beans recipe is loaded with veggies and full of Mexican flavors, making it a great side dish for for tacos!

Ingredients

– 2 tsp extra virgin olive oil – ½ cup chopped onion – ½ cup chopped bell pepper – ½ cup chopped tomato – 2 cloves minced garlic – 1 tsp minced jalapeno – ¼ cup chopped fresh cilantro – 1 ½ tsp taco seasoning – ½ tsp sea salt – 1 bay leaf – 1 lb dried black beans – 4 cups of chicken stock

How to Make Mexican Black Beans in the Instant Pot

Sauté Onion & Bell Pepper in Olive Oil

Warm the olive oil using the Sauté function, then add the onion and bell pepper. Cook until the onions are translucent.

Add the Tomato, Garlic, Jalapeno & Cilantro

Stir in the tomato, garlic, jalapeno, and cilantro and cook for about 60 seconds, then turn off the heat.

Add Remaining Ingredients

Stir in the taco seasoning, sea salt, chicken stock, dry beans and bay leaf. Be sure nothing is stuck to the bottom of the pot to prevent a burn warning.
