Make Your Own Mexican Rice

Making Mexican Rice on the stovetop is challenging. My Instant Pot Mexican Rice recipe is incredibly easy to make and comes out perfect every time.

While I saute the veggies first, you can make it as a dump-and-go recipe and it still tastes delicious.


– 1 teaspoon extra virgin olive oil – 2 sliced green onions – 1 teaspoon minced fresh garlic – 1 cup diced fresh tomatoes – ¼ cup fresh cilantro – ½ minced jalapeno – 2 cups jasmine rice – 2 cups chicken stock – 2 tablespoons tomato paste – 2 teaspoons sea salt – 2 teaspoons taco seasoning

How to Make the Best Instant Pot Mexican Rice


Saute the Veggies in Olive Oil

Press Saute on your Instant Pot, then add olive oil to the pan. Saute the green onions, tomatoes, cilantro, garlic & jalapeno for 1-2 minutes.


Add Jasmine Rice to the Pot

Add the rinsed jasmine rice to the pot and stir to combine. Saute for 2-3 minutes, then turn off the heat.


Add Remaining Ingredients to the Pot

Add chicken stock, tomato paste, seasoning & salt to the pot. Stir to combine and deglaze the bottom of the pot to avoid a burn notice.
