Ingredients
5orange bell peppersor your favorite color
1boxrice pilafor equivalent amount of your favorite rice blend
5ouncescanned stewed tomatoes
2tablespoonsunsalted butter
1poundground beef
¼cup red oniondiced
Instructions
Cook ground beef over medium heat on your stove top for about 18-20 minutes or until cooked through, stirring and breaking up frequently. For extra flavor, add diced organic red onion to beef and sauté for 5-8 minutes, then remove from heat.
Following the step-by-step directions on the rice pilaf box, combine rice and unsalted butter. As directed, cook on stovetop until golden brown. Add water (2 cups), seasoning and stewed tomatoes to stovetop. After it comes to a boil, cover stovetop pan and reduce heat to low for 15 to 20 minutes. You can alternatively use your favorite rice and seasonings to make the equivalent amount of rice.
Combine the rice and the beef and set aside.
Cut an inward circle at the top of each pepper. Holding the stem, pull the top from each pepper and set aside - you'll need this for the lid later.
Carefully remove the seeds from each pepper, then rinse out the inside and pat dry.
Using a small paring knife (an X-ACTO knife works great too), carefully cut out triangular eyes, a nose and a crooked mouth (or whatever face you think will make your kids smile).
Stuff each pepper with the rice and beef mixture. Serve with lid on top or at side. Enjoy!
