1cupdried blueberriesor your favorite dried fruit
1cupunsalted cashewsor your favorite nuts
1cupmedjool datespitted
Instructions
The first step is to place the dried blueberries, cashews and pitted dates into your food processor or high powered blender.
Next, place the lid on your blender and pulse the mixture until a sticky dough forms. You'll probably need to scrape the sides of the blender a few times to get a paste to form. You can leave it chunkier or make it smoother, depending upon your preferences.
Scoop the paste out onto a silicone or parchment paper lined cookie sheet or cutting board.
Shape the blueberry-cashew-date paste into small balls using about 2 teaspoons of paste per bite (or use a silicone mold to make fun shapes).
Refrigerate for about an hour or until the paste is cold and has a firm texture, then your delicious energy balls are ready to enjoy.
