Instructions
Preheat the oven to 325˚ F.
Place the chopped veggies and garlic cloves, into the bottom of a small roasting pan.
Rub the turkey breast with the butter, both on the outside of the skin and inside the cavity. Sprinkle sea salt, pepper and garlic powder all over the turkey breast. Place turkey breast on top of the veggies in the roasting pan, breast side up.
Roast the turkey breast for about 2 ½ hours or until the internal temperature of the thickest part of the turkey breast reaches 165˚ F on an instant read thermometer.
Once the turkey breast is cooked, transfer it to a heat-resistant cutting board. Using aluminum foil, tent the turkey breast for 30 minutes, then serve.
