Add the jasmine rice to the fine-mesh strainer and rinse under cold water for 5-10 minutes, or until the water rinses clear. You want to make sure to rinse as much starch off as possible.
Turn your Instant Pot onto Saute mode, and warm the olive oil. Add the rinsed rice to the Instant Pot and stir to coat in oil, then sauté for about 2 minutes, stirring frequently.
Turn off the Instant Pot and immediately pour in the filtered water. Stir to combine and make sure no grains of rice are stuck to the bottom of the pot or you could get a burn notice.
Place the lid on the Instant Pot, be sure it's in the sealing position, then set it on High Pressure and pressure cook for 4 minutes (the Rice setting is meant for standard long grain rice). When it's done cooking, use a natural pressure release for 15 minutes, then use quick release to release any remaining pressure and remove the lid. The water should be completely absorbed into your fragrant jasmine rice.
Stir the rice gently for fluffy jasmine rice.
