Turn your Instant Pot onto Sauté mode and add the bacon grease. Once the grease is hot, add the onion and cook for 3-4 minutes or until it's slightly translucent.
Add the garlic and jalapeno to the pot and stir for 30 seconds. Press Cancel to turn off the Instant Pot.
Add the chicken stock, rinsed beans, taco seasoning, sea salt and bay leaf to the pot, then stir to combine.
Turn your Instant Pot on high pressure for 1 hour and 20 minutes with the sealing valve closed. Allow all of the pressure to release naturally then open the lid.
Stir the beans and taste to adjust the salt and spices. Transfer your yummy pinto beans to a serving bowl to set on the dinner table.
