Once you have two halves of each squash, use a spoon to scoop the seeds out of the inside of the squash, just like you’d do with a pumpkin. Discard the seeds.
Warm your extra olive oil, add the onions to the pan, stirring frequently, and cook for about 5 minutes. Add the garlic and cook for about 30 seconds – you’ll start smelling the aroma of garlic quickly.
