1tablespoonmelted unsalted butter OR 2 ½ tsp olive oil
You will need something that you can squirt pancake batter out of. A small squeeze bottle of sorts or a large kitchen syringe would work well. You will also need a way to get batter into it like a funnel.
Get your griddle or pan started before mixing so that it’s heated up when your batter is ready. If using a griddle, set it to about 350 degrees F.
Mix all of the ingredients except for the cinnamon and nutmeg. Leave those aside for now.
Make sure that there are no clumps in the batter so that it works smoothly.
Reserve about ¾ cup of batter in a bowl and mix in the cinnamon and nutmeg well. Making sure that there are no clumps of spices left.
Place the spiced batter into the bottle or syringe that you are using.
Put the regular batter onto the griddle as usual, and then take your spiced batter and swirl it into the pancakes on the griddle. I used an old vintage mustard bottle to do this and it worked well to just squeeze it and move my hand around.
Cook the pancakes as you normally would and add your choice of toppings to them.
I also made a few pancakes with just the spiced batter, as well as some “swirls” by themselves to put on top of the stack of pancakes.
