By no means could you call my family vegetarians. While we do eat a plant-heavy diet, we also enjoy eating quality meats like grassfed beef, organic chicken and hertitage pork like that offered by ButcherBox.
We do, however, enjoy having vegetarian meals on occasion. I find that curries and other sauce heavy meals work best for Meatless Monday meals in our home.
I usually make it in the slow cooker. However, I’ve been converting my slow cooker recipes to Instant Pot recipes for a while now, and this one came out amazing.

Instant Pot Vegetable Curry
- Place all of the ingredients except for the cherry tomatoes into your Instant Pot. Set to high pressure on manual for 10 minutes.
- Once the time has completed, release the pressure using a quick pressure release.
