Follow these simple step-by-step instructions to learn how to make one of my favorite South American dishes, Reuelto Gramajo.

Step 1: Cook Potatoes

Cook 16 ounces of frozen french fries according to the directions on the package. You’ll want to make the rest of the recipe while they’re cooking.

Step 2: Prepare Ingredients

While the French fries are cooking, chop one bell pepper, one white onion, ⅓ cup of chives and 8 ounces of bacon, and grate 1 cup of mozzarella cheese.

Step 3: Cook Bacon and Vegetables

In a large skillet, saute the bacon, bell peppers, onions and garlic until the bacon is cooked through and the onions are translucent.

Step 4: Beat Eggs and Cream

While the bacon and veggies are cooking, whisk together 8 eggs with⅔ cup of heavy whipping cream, sea salt and pepper, to taste.

Step 5: Add Egg Mixture to Pan

When the bacon and veggies are cooked, add the beaten egg mixture to the pan and stir.

Next, after the eggs are starting to cook, add the grated mozzarella cheese, then stir well.
