There are nights where I have absolutely no desire to cook. But the thought of heading out the door to grab takeout is just as daunting.
So what to do on those nights? Well, over the years, I have come up with a variety of hacks to get dinner on the table fast.
First, we look at whether we have enough leftovers to make a meal out of yet. Often we do, but when we don’t, I have some quick and easy recipes on standby.
They’re quicker to prepare than driving to grab takeout. And now that the girls are older, I can delegate tasks so dinner is on the table even faster.
One of those nights inspired this yummy Shrimp Fried Rice recipe. It’s seriously faster to make and tastes better than takeout! I find Asian dishes to be faster to prepare in many instances.
To make it happen, we keep frozen shrimp in the freezer along with a couple boxes of Ling Ling Fried Rice. I like to use the Chinese-Style Vegetable Fried Rice so my family gets plenty of veggies in their Shrimp Fried Rice.

Shrimp Fried Rice That’s Faster & Better Than Takeout

- 2 tablespoons sesame oil
- 1 pound medium fresh shrimp cleaned, peeled and de-veined
- 2 garlic cloves minced
- 1 teaspoon fresh grated ginger or ginger paste
- 1 package Ling Ling Chinese-Style Vegetable Fried Rice
- 2 pastured eggs lightly beaten
- 2 green onions trimmed and sliced into thin rounds
- 3 to 4 tablespoons coconut aminos
- ¼ teaspoon sea salt or to taste
- 1/8 teaspoon ground black pepper or to taste
- Add 1 tablespoon of sesame oil to a wok or large skillet and heat over medium-high heat. Add the shrimp to the pan and cook for about 3 minutes, flipping halfway through. You want to make sure they’re cooked through, but don’t overcook or they’ll be rubbery.
- Transfer the shrimp to a plate, and set aside.
- Add 1 tablespoon of sesame oil to the wok, then add the garlic and ginger to the pan and allow it to cook until fragrant, stirring frequently, about a minute.
- Add the Ling Ling Fried Chinese-Style Vegetable Fried Rice to the pan, and cook covered for about 8 minutes, stirring frequently.
- Push the rice to the side of your pan and pour the scrambled eggs into the open side of the pan. Stir to scramble, then stir the eggs into the rice once they’re cooked.
- Add the shrimp, green onions, coconut aminos, salt and pepper to the pan, then stir until well combined. Cook for 2-3 minutes, or until the shrimp are warm.
- Serve in a bowl with chopsticks for a fun meal!
