Snacks can be delicious and healthy too. This no bake Cherry Almond Energy Bites recipe can be made very quickly using only 3 simple ingredients.
Almonds have always been one of my favorite snacks. I love taking almonds as a hiking snack. One ounce of almonds (about 23 almonds) contain 6 grams of protein. I love how they keep me feeling full longer and are a very simple snack in themselves.
I love making energy bites as a tasty and sweet treat that includes a protein boost from almonds. I like using almonds in my energy bites because they give a good, crunchy texture. Many other nuts kind of melt into the mixture and you don’t get that great texture.

- Place the dried cherries, almonds and dates into your food processor or high powered blender and mix or blend until they form a paste. You can leave it chunkier or make it smoother, depending upon your preferences.
- Scoop the paste out onto a silicone or parchment paper lined cookie sheet or cutting board.
- Shape the cherry-almond-date paste into small balls using about 2 teaspoons of paste (or use a silicone mold to make fun shapes).
- Refrigerate for about an hour or until the paste is cold and firm, then your Cherry Almond Energy Bites are ready to enjoy.
