I like using almonds in my energy bites because they give a good, crunchy texture. Many other nuts kind of melt into the mixture and you don’t get that great texture.

Ingredients
- 1 cup dried cherries
- 1 cup almonds
- 1 cup medjool date

- Place the dried cherries, almonds and dates into your food processor or high powered blender and mix or blend until they form a paste. You can leave it chunkier or make it smoother, depending upon your preferences.
- Scoop the paste out onto a silicone or parchment paper lined cookie sheet or cutting board.
- Shape the cherry-almond-date paste into small balls using about 2 teaspoons of paste (or use a silicone mold to make fun shapes).
- Refrigerate for about an hour or until the paste is cold and firm, then your Cherry Almond Energy Bites are ready to enjoy.
Notes
Store your energy bites in an airtight container in the refrigerator. Your Cherry Almond Energy Bites will be best enjoyed within a week if you can resist eating them all the first day!
