I have always loved breakfast. When I was a kid, pancakes were one of my absolute favorite breakfast foods. I think that I enjoyed being in the kitchen with my family as much as I loved eating the pancakes.
Since I’ve been gluten free for so long, I’m always experimenting with new gluten free pancake recipes. While I love Low Carb Pancakes, sometimes I like to mix it up. So today, I’m sharing a recipe for Gluten Free Chickpea Pancakes.
Yep, you read that right. Chickpeas as in garbanzo beans. The sames beans you use to make hummus!
When you go gluten free, you aren’t just stuck with just grains and nuts as flour options. You can use bean flour too! It may sound odd at first, but it’s a great way to add some extra protein and fiber into your diet. Your kids probably won’t even notice!
You can buy chickpea flour or you can make your own with dried garbanzo beans and a good grain mill (I have a Wondermill). Other than that, you likely have everything you need in your pantry already (you can substitute MCT oil for another oil if you prefer).

Gluten Free Chickpea Pancakes
- Add all ingredients to a medium sized mixing bowl and whisk until well combined.
- Allow the batter to rest for 5 minutes.
- Heat and oil your pan.
- Pour around 1/4 cup of batter into the pan.
- Cook until lightly golden, the flip.
- Cook for one more minute, then transfer to a plate.
- Serve with your favorite toppings and breakfast sides!
